4. Mocca Choc-Goji Biscuits
Ingredients:
1 egg
1.5 cups (250g) soft brown sugar
2/3 cup (150g) butter or margarine
2.5 cups (400g) plain flour
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1.5 teaspoons bicarb soda
1 cup cooled brewed coffee
1x300g pack Dark Chocolate Goji Berries
1 cup coarse chopped nuts
(eg. macadamias, pecans, walnuts)
How to: Cream butter and sugar. Add the egg, mix well. Combine flour, spices and bicarb soda and sift. Fold into creamed mixture alternating with coffee. Stir in goji berries and nuts. Drop heaped teaspoons of mixture onto lined oven tray (allow room for spreading). Bake in moderate oven (180 degrees) for 15 minutes or until cooked. Cool on a wire rack. Store in an airtight container.
