The ORAC (Oxygen Radical Absorbance Capacity) test works by giving a good idea of the free-radical-destroying potential of a given food by measuring the time an antioxidant takes to react, as well as the capacity of antioxidants within the sample food. It combines these elements into one measurement that is commonly expressed in terms of a 100 gram sample.

It is a test tube analysis that measures the total antioxidant for aging power of foods and other chemical substances. Due to recent furor over antioxidants, researchers at the Agricultural Research Service (ARS) in the US decided to look more closely into isolating the benefits of such substance and they found that adopting ORAC as a method of study might help them achieve their goals much easier.
